This is one of China’s most famous leaf teas. It is grown in the mountains around Hangzhou, a region known for its exceptional teas, high rainfall and frequent mists. First produced in the 1800s, it is still only gathered for a few weeks in the early spring when the buds are at their most delicate, and processed by hand. It is bright and fresh, with intriguing complexity and hints of peach.

Allow freshly boiled water to cool for 4-5mins. Preheat the teapot and add 2-3g of tea per person. Infuse for 2-4mins.
