The delicate, daisy-like camomile flower has been celebrated by herbalists since ancient Egyptian times. Derived from the Greek 'Camoemelon', camomile literally means 'earth apple' because the scent of the flowers is reminiscent of fresh apples. The flowers are harvested by hand using a special comb that selects only the biggest buds, leaving the rest to grow to maturity. They are then naturally air-dried, the end result being a deliciously fragrant and gentle infusion.
