Turmeric & Coconut Porridge Bowl

Enjoy a warming turmeric and ginger porridge bowl, made with fluffy oats and freshly grated ginger. Enjoy it with a cup of our True Clarity Ginger.

Ingredients
  • 2 tsp finely grated fresh turmeric (dried is also fine)
  • 180g rolled oats
  • 330ml coconut milk
  • 2 tbsp maple syrup
  • 1 tbsp coconut oil
  • ½ tsp vanilla extract
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon, plus extra to dust

To serve (optional): Coconut yogurt & coconut flakes.

Method

Combine turmeric and 3 cups water in a bowl and stand for 10 minutes to infuse.

Once infused, place all the ingredients into a wide saucepan over a medium heat and cook, stirring regularly, for 8 minutes or until thick and creamy.

Divide porridge between serving bowls and top with coconut yoghurt, coconut flakes and dust with extra cinnamon. Best enjoyed with a cup of Dragonfly True Clarity Ginger.
