One of the most highly prized of all Japanese teas, this fine green tea is aptly named ‘Dew Jewel’ for its delicate glossy leaves and incomparable taste. The dark pine-like colour of the leaves and subtlety of flavour develops through the practice of shading the tea plants from the sun a few weeks before harvest. The shade increases the chlorophyll in the leaves and gives depth to the colour, flavours and aromas. After being picked by hand, the tender leaves are then carefully steamed, rather than fired, to produce a characteristically rounded flavour with soft umami notes and a fresh herb-like finish.
For a perfect cup: Allow freshly boiled water to cool for 5 minutes (60C). Preheat teapot and measure 2-3g (roughly a pinch) of tea per person. Infuse for 1–2 minutes. To enjoy added nuances, reinfuse the leaves up to 4 times.
